I’ve gotten in the worst breakfast rut lately. And by the worst, I mean I rush out the door without munching a single bite and then I start eating my work lunch piece by piece around 9am. And yes, all I need to do is set my alarm a whooping FIVE MINUTES (oh the dread) earlier. Why is that so hard???

So, today, I’m sharing three breakfast ideas I’ve been enjoying the past couple weeks that have gotten me a bit more on track! They’re all made with bananas – my favorite energy-boosting and mega affordable fruit! We’ll top ’em and mix ’em and blend ’em and we’re going to end up with three great, super fast breakfasts to keep in mind.

Also, these recipes are, um, barely recipes. Mostly it’s a handful of this and a sprinkle of that and boom you’ve got yourself a delicious breakfast! Which also means you have the freedom to customize to your heart’s delight!

The Nutty Banana Breakfast

Make the Nutty Banana Breakfast with:

  • Sliced banana
  • Drizzle of your fav nut or seed butter (I used pb, duh)
  • Handful of granola

Just toss that all together and fall in love with that crunch!

How to make this handful of granola: I’m ALL about skillet granola these days and it is the EASIEST. For the Nutty Banana Breakfast, I tossed a handful of oats and chopped pecans into a small skillet over medium heat. I tossed it with a drizzle of honey (maybe a teaspoon?) and toasted it all for about three minutes. And ta-da, you’re done!

Seriously, couldn’t be easier. Unless you make a big batch of granola in advance – I also highly recommend this!

The Fruity Banana Breakfast

Make the Nutty Banana Breakfast with:

  • Sliced banana
  • Handful of berries
  • Another handful of fruit
  • Drizzle of honey/agave/maple syrup

I used blackberries and kiwi and that is one seriously winning combo. Then, I drizzled with honey because YUM. But, yes, the natural sweetener is 100% unnecessary – but sometimes, just treat yo self, you know?

Make the Blended Banana Breakfast with:

  • Sliced frozen banana
  • Handful of frozen berries
  • Drizzle of honey/agave/maple syrup
  • Splash of milk (almond, cow, coconut, you do you here)

Y’all know smoothies have been done a 10,000x times and there is nothing new under the sun in that realm (though then I see something like a FIG and ALMOND BUTTER smoothie and my mind is blown and, yes, there are still smoothies we must discover!!) But we could all use a reminder that smoothies are:

  1. Amazing
  2. Easy
  3. Affordable
  4. Delicious

I made another one this afternoon and they’re just GOOD. They’re a fantastic breakfast and we should all enjoy them more instead of starting to munch on our carrot sticks at 8:30am because we’re so hungry. Try this smoothie and you’ll be good ’til 12pm!
