A beautiful salad made from everyone’s favorite pink fruits!
The days are getting shorter – how is this happening already!? Summer is winding down. Though, my first summer in Colorado was last year and I felt like it stayed amazingly hot well into September and October – not like autumn growing up in Minnesota at all!
For those of you from the Midwest like me, Colorado weather might be totally baffling – it sure is to me! I’m used to October rolling around and the whole land sinking into a deep freeze that won’t thaw for months. Not so in Colorado! The warmth breaks through often and melts the snow, with 50, 60, even 70 degree days in January! It completely blows my mind and also makes me SO happy all through the winter. Summer ending is more bearable with such mild winters here! It’s a dream!
Even with the amazing weather in Colorado, inexpensive fresh fruit is only around for so long! Let’s take advantage of it with a healthy, easy fruit salad – that’s also totally adorable because it’s PINK.
To be honest, the inspiration for this pretty pink fruit salad is an absolutely ridiculous story. I had purchased a bag of red grapes about a week ago and this weekend I was wondering how to best use those – just eating them plain just wasn’t doing it for me. And then I thought, “What if I made a cute, PINK fruit salad?! How very baby/bridal shower! How adorable! Way to elevate a normal ole fruit salad!!” And I looked around my kitchen and thought, “OH! The red grapes will work perfect. So, all I need to get to finish this out is watermelon AND apples AND strawberries AND raspberries.”
So, that’s how I bought four more ingredients in order to make use of one ingredient. Maybe not the most brilliant move, but that fruit has been disappearing like crazy from the fridge the past two days and that’s never a bad thing! But, tell me I’m not the only one this happens to! Do you ever buy tons more ingredients for the sole purpose of getting rid of a single, random ingredient?
Now, let’s get to this super easy fruit salad!!
If you want an easy fruit salad, this is as easy as it gets! You’ll do about ten minutes of chopping watermelon, cutting an apple, and halving strawberries. The grapes and raspberries just need to be washed and you’ll throw all five of these fruits in one big bowl. Top with a bit of lemon zest (I just got that fancy tool to zest last week – it’s the best!! It was like seven dollars and to avoid the frustration I feel every time I try to zest something with a paring knife, the value is ten times that!) and squeeze some lemon juice on top to help keep the fruit fresh and to give a bit of tartness! That’s all! No heavy dressing, no caloric-filled drizzle, just simple fresh ingredients.

- 3 cups watermelon, cubed
- 1 red apple, sliced into chunks
- 1 cup strawberries, sliced
- 1 cup raspberries
- 1 cup red grapes
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- Combine all fruit in a large bowl and gently stir.
- Sprinkle the lemon zest and lemon juice over the top and toss to combine.
All ingredient amounts are 100% suggestions and 100% adaptable!! Hate strawberries? Skip 'em! Love raspberries? Add more! Do not feel confined in any way by my suggestions!!
