Bringing you the best recipes of the past month!
June has been a terrific month! I’ve had so much fun developing new recipes and sharing them with you! We kicked off the month with an awesome Blackberry Almond Salad with Poppy Seed Dressing – I just loved this! It is such a great, summery, fun, and fresh option for a quick dinner. Then, I shared an easy smoothie, my Energizing Banana Blueberry Smoothie.
Those two gluten-free recipes were followed with another two great gluten-free recipes: Gnocchi “Mac” and Cheese and Breakfast Stuffed Peppers. I love to share recipes that cater to all sorts of dietary needs! If you haven’t noticed before, I often include notes below my recipes with suggestions to adjust to your dietary preferences. I wrapped up this month with my Fresh Summer Rolls and their perfectly paired Easy Peanut Dipping Sauce. I highly recommend this for a fun appetizer! So often at large gatherings like potlucks or family get-togethers, there is a lot of heavy food. Bring in a plate of these summer rolls and their sauce, you’re going to get a LOT of happy people who have been craving something fresh and light to enjoy.
This was my most liked Instagram post of June and I can see why – this smoothie just looks so good!
And my second most liked Instagram post — this to-die-for Gnoochi “Mac” and Cheese! You don’t even know how amazing this tastes, until you try it! And you just gotta try it!

These were PERFECT for our camping trip this month! Loved them and heated them up in foil over our fire!
This was a fresh, simple, and tasty salad! My husband and I tried a scoop of this salad in our typical veggie wraps and it brought them up to a new level. We totally loved it.
Delicious, easy, and anything that allows me to munch on some hummus and pita bread is a win in my book!
