A flavorful pizza inspired by Mediterranean ingredients!
I am ALL about Mediterranean ingredients lately. Feta is one of my favorite cheeses, red onions are always a favorite, and lately a small miracle has happened – my husband started like Kalamata olives. Seriously, he started liking them. It was like one day he didn’t, the next day he did! He tried them a few times and finally some warm hummus topped with feta, cherry tomatoes, and Kalamata olives won him over!
I can’t tell you how much more fun it is to serve a dish when no one is picking around their least favorite ingredients! (But really, I love him so much, if he really wants to leave his plate full of olives, he can. And 99.9% of the time, he loves what I serve him!)
Do you have any stories like that? Was there ever a food you hated and somehow grew to like? I feel like this must happen a lot and I want to hear your stories!
So, after this amazing transformation of my husband’s taste buds, I made a Greek pizza topped with all my favorite Mediterranean ingredients – not holding back for any picky eaters! This simple pizza is made with Kalamata olives, feta, red onions, mozzarella, and a few leaves of basil. Simply roll out your pizza dough, spread your sauce, and top with all that deliciousness! You are going to love this combination of flavors, each so distinct but all complementary!
And you’re going to love how easy it is to make this whole dish! Pizza dough and pizza sauce can always be made ahead and I love to do that. Usually when I make them, I make a big batch of each and freeze them so that anytime we’re wanting an easy dinner, I just pull the dough and sauce out and use whatever I have on hand for toppings! You can do this too, and I assure you this makes dinner SO easy and SO fast and pretty impressive for a weeknight.
I also think homemade pizza is so fun to serve to dinner guests. Last time we had some friends over for a casual dinner, I made a chicken enchilada pizza, a cheese pizza, and an earlier version of this Greek pizza! Everyone got to chose a slice of what they wanted to try and could go back to get more of their favorite. You should definitely try this sometime soon – I think you’ll love it and so will your guests!
With my extra dough and my few leftover toppings, I couldn’t resist making a mini version. It’s just so darn cuteeee (and pufffffy because I didn’t roll out the dough enough, but I guess that just makes it an awesome thick crust)! Of course, you could make all mini versions of this pizza – kinda like personal pizzas!!
- Pizza dough for one large pizza
- 1 cup pizza sauce
- ¼ red onion, sliced thinly
- ½ cup Kalamata olives, halved
- ½ cup feta cheese, crumbled
- ½ cup mozzarella cheese, shredding
- A few leaves of basil, sliced thinly
- Preheat oven according to your pizza dough’s instructions, typically around 425 degrees.
- Spread your pizza dough on your floured pan (or parchment paper-covered pan). Spoon the pizza sauce onto the dough and spread evenly.
- Top with the red onion, Kalamata olives, feta cheese, mozzarella, and basil.
- Cook according to your pizza dough’s instructions, typically around 20 minutes at 425 degrees. Remove from oven when the crust is well browned and the cheese is bubbling.
Make vegan: Leave off the cheese and top with more veggies like cherry tomatoes and green bell pepper.
Make gluten-free: Use a gluten-free crust.
