Thai-inspired, perfect for veggies, and so simple to make!
Happy Tuesday to all of you today! I can hardly believe it is already almost July, but boy this has been a fantastic summer so far! We’ve visited our families in SC and MN, gone camping, hiked some beautiful mountains, made some delicious food (obviously!!), helped with snacks at our church’s VBS (those kids were so adorable), planted a mini apartment balcony garden, and soaked up these long summer days.
One part of this summer that I’ve also really enjoyed has been working towards a much more refined-sugar-free kitchen. Yes, I truly have enjoyed it! I’ve done a few weeks with zero refined sugars and I have just been so surprised by how easy it is and how good I feel about it. I mean, come on, of course I love my treats! Just take a look at my dessert archives! But it has been quite easy to teach myself not to expect one of those rich, amazing desserts after every lunch and dinner. I might go for something else sweet, like a small cup of 100% juice, berries, or peanut butter on toast to satisfy my sweet tooth, but overall, my sugar intake is way down and I feel so good not needing treats all the time. Special occasions still call for treats – and so do camping trips and family visits! But I do feel healthier when I eat this way and I’m excited to continue sharing recipes without refined sugar!
I’ve got a recipe here for your today that’s gonna facilitate a LOT of vegetable-eating in your house!
This Easy Peanut Dipping Sauce is perfect for dipping veggies of all kinds in (and maybe some pretty summer rolls that you’ll see on the blog later this week and maybe you are getting a tiny sneak peek in these pictures). It’s sweet because it has peanut butter and honey in it. But then, HOLD ON A MINUTE, then you’re gonna add soy sauce, lime juice, ginger, and chili powder!! Explosion of amazing flavors! Way better than just sweet – the finished flavor is complex, Thai-inspired, and totally addicting.
You’re going to love the sauce so much, you’re gonna keep on eating veggies and before you know it, you are somehow going to hit your five servings of daily vegetables! And veggies have seriously never tasted so good. This sauce transforms sad, raw, boring veggies into the belle of the ball, dressed in yummy peanut goodness.
This recipe makes a rather thick sauce – all the better for scooping up a ton of it onto your veggies! I love it this way. But if you prefer a slightly thinner sauce, simply mix in a tablespoon or two of water.

- ⅔ creamy peanut butter
- ¼ cup honey
- 2 Tablespoons soy sauce
- 2 Tablespoons lime juice
- 1 Tablespoon plus 1 teaspoon ground ginger
- 2 teaspoons chili powder
- Mix together all ingredients for a few minutes, until very well combined. It will take a bit of whisking to really get the peanut butter mixed in (it might look stringy at first, but just keep on going, it will get smooth).
- Enjoy with veggies or summer rolls!
Storage Suggestion: Keep in fridge for up to 2 days in a covered container.
