The best of May!
It’s been a great month! This month, I graduated from college and my parents flew up to CO to celebrate with us. My husband and I also got to visit his family in SC and enjoyed good food, hot weather, and a really cute baby with them. I also started my awesome real-life, grown-up, full-time, post-grad job and that is super exciting!
This month I posted a bunch of new recipes and here’s a round-up in case you missed any!
My most viewed post this month – – – this absolutely to-die-for Cinnamon Brown Butter Ice Cream. I agree with y’all wholeheartedly there: this ice cream is the bomb dot com. The richness, the creaminess, the sweetness, it’s going to knock your socks off. So, run, do not walk, to your kitchen and whip up a batch ASAP.

And my most liked Instagram picture this month – – – same recipe! Gah, this ice cream is just amazing. My husband and I have been discussing a refined sugar-free and refined grain-free challenge, but maybe we should just make a batch of this ice cream each and put our feet up for the day.
And my second most liked Instagram picture in May, another dessert to drool over! It’s also gluten-free! This apple crisp cannot be limited to only one season a year; it is way too delicious for that!
Other tasty posts from May you probably need in your life: Peanut Butter Crunch Granola Bars. Talk about perfect balance of sweetness, crispiness, crunchiness, and energy-giving-ness – I LOVE these and regularly make them now. Plus, they’re gluten-free and made with zero refined sugars! I tried Dana’s recipe with a few adjustments and just loved it! Stuffed peppers are quickly becoming a favorite in this house!
This chili is a dream. It’s hearty, filling, and full of protein. It’s perfect for an easy dinner and even better as a yummy lunch the next day! My husband and I don’t limit ourselves to winter months for chilies and soups because we like them way too much!
I tried out this recipe just yesterday and we’re still enjoying the leftovers. It can be made gluten-free and it’s naturally sweetened with honey – no refined sugars here! It’s a great, fruity, on-the-go breakfast.
