Hi all! Today I’m kicking off a new series of monthly highlights. In these posts, I’ll share a little about my month, the dishes I posted about, the recipes I’m trying, and more!
This month has been crazy, y’all! I expected a quiet month before summer kicked off. There wasn’t much on the calendar and I was focused on finishing my last four weeks of college (eeek!!!) strong. Instead, I found myself racing between writing final papers, working my on-campus marketing job, and starting my new post-grad job – yay for employment!! But, wow, nearly 30 hours a week of work plus full-time school is no joke! Now I just have three finals between me and graduation and I am ready to do this!!
During this wild month I also posted some of my favorite recipes I’ve ever done here on the blog. I am so, so proud of these Berry-Filled Lemon Meringue Nests! I fought through high altitude struggles, cream that wouldn’t whip (tip: thawed, once frozen cream will not whip), and one burnt batch. Still, look at these beautiful things! I say it was 100% worth it. My recipe lays out clear directions and explains how to avoid common pitfalls so you can produce the same result on your first try!
These meringue nests were also my most viewed post this month – turns out we like the same things! Who can deny a dessert topped with fresh berries this time of year, anyway? They’re amazing.
Another one of my favorite recipes I made this month was my Honey Butter Skillet Biscuits! I love cooking with a cast iron pan and this was the first time I featured one of those recipes on the blog. Give this girl carbs and she’ll be a happy camper! Slather them in honey butter and I might just explode from the deliciousness!
In case you missed anything: this month I also shared my Chocolate Chip Oatmeal Bars, a totally insane and over-the-top ice cream recipe, and a super simple, five-minute, single-serve Blueberry Frozen Yogurt recipe! I love all three of these desserts and think you will too! And if you want a sweet, but healthier treat, try out my Homemade Cinnamon Applesauce. I could probably eat about a quart of this stuff in five minutes flat. SO. GOOD.
I explored some new spices and flavors with my Chicken Stir Fry with Spicy Thai Peanut Sauce and these Indian-Spiced Roasted Carrots. And I still am not over the color of these carrots when roasted – so, so gorgeous!
My most liked Instagram photo in April was this incredible Mexiterranean Salad which I posted on the blog in March. I love this salad and I love how that amazing honey-lime dressing is showed off in this picture!
I have been admiring so many recipes from other food bloggers this month! I tried several and these are my top three:
A seriously amazing lasagna with the simplest sauce to drench it all in! It’s topped with swiss which is not my normal go-to cheeses for a dish like this, but my goodness, that swiss is perfect on top! Loved this recipe and have already made it again!
This soup was a life-saver when my husband was still recovering from his surgery! Super quick to throw together and so, so tasty!
These were just a fun dinner! Lately I’ve had a bit of a pretzel addiction and so why not crush them up and bake them onto chicken, right?? We loved these!
