Two ingredients, five minutes, one fruity and fun snack!
We make a lot of ice cream in our kitchen – like a LOT. Unfortunately, I have completed trained myself to expect something sweet after dinner every night. The other night I whipped up a batch of this super simple yogurt for a healthier alternative. It turned out to be a great, little treat!
You will love this recipe because it’s so simple. Just blend up your yogurt and frozen blueberries together and allow to freeze for about an hour. No churning, no overnight freezing, and no yucky ingredients! Of course, this isn’t going to be exactly like the frozen yogurt you find in those shops. The consistency is a little different but still a lovely, smooth texture. And this little treat tastes fresh, sweet, and perfect for these warmer spring days! And that color — so fun!!
Now, you can only freeze it for about 1 or 2 hours to reach the thickness of typical frozen yogurt. That’s your cue to start indulging! Any longer than that, this recipe will become much more firm – still delicious, just not what we’re going for here! Frozen yogurt like you typically enjoy is filled with sugars that keep it soft and scoopable. We avoid the sugar – this recipe is made with just yogurt and blueberries and – plus! – it’ll be ready to eat in just an hour!
Single-Serve Blueberry Frozen Yogurt
Time: 5 minutes active, 1 hour total
Yields: 1-2 servings
1 cup vanilla yogurt
1/2 cup frozen blueberries
1 teaspoon honey, optional (for extra sweetness)
- Blend yogurt and blueberries (and honey, if desired) together in a blender or food processor until well combined.
- Freeze in a freezer-safe container (any glass bowl or cup will do) for 1 or 2 hours, depending on your desired consistency. Give it a quick stir and enjoy!
